By not storing anything more than what is required for the server to display the website, we don’t really need to protect any

None, as I do not collect that kind of information.
What third parties we receive data from
I use Cloudflare as a proxy front-end service, which collects usage data (i.e. what web pages are being loaded, where I need to change caching settings, etc). As well, I use GetInsights.IO to collect visitor count (everyone), and if Do Not Track is disabled, the screen size, language, Google Search terms, referrer and which page.
What automated decision making and/or profiling we do with user data
Zilch. I ain’t got any use in it.
